Chef Bertrand Grébaut of Septime in Paris has passed away.
His restaurant had long been on my mind, and I had been following it on Instagram.
Last year, a message arrived from that very account, and he came to visit Pasania.
I could hardly believe it — a chef I had admired for so long, sitting at my own counter, while I poured him Japanese wine and served him our food.
And of course, I asked him to sign my treasured copy of the Septime book.
I promised I would be sure to reach out whenever I came to Paris. I never imagined our farewell would take this form.
I will never forget the honor of his visit to Pasania, or the precious time we shared.
He was a man of remarkable humility and immeasurable talent.
Chef, thank you for everything.

ずっと心に留めていたお店で、Instagramでフォローしていました。
昨年、まさにそのアカウントからメッセージが届き、シェフがパセミヤを訪れてくださいました。
長年憧れてきたシェフが自分の店のカウンターに座り、自分が日本ワインを注ぎ、料理をお出ししている——なかなか信じられない光景でした。
そしてもちろん、大切にしていたSeptimeの本にサインをしていただきました。
パリに行くときは必ず連絡すると約束していたのに、まさかこのようなかたちのお別れになるとは思ってもみませんでした。
パセミヤへ足を運んでくださった光栄と、共に過ごしたかけがえのない時間を、決して忘れません。
素晴らしい謙虚さと、計り知れない才能を併せ持った方でした。
あなたに感謝しています。来てくれてありがとう、ベルトラン。
